BEHIND THE COUNTER: Little Beaver builds, fills appetites

Look for where city meets country and you'll find the Little Beaver Restaurant at this crossroads community west of London.

"A lot of city people come out here regularly," says Larry Welch, proprietor of the 95-seat home-style eatery that has become a landmark and more.

Tradespeople pull in with their rigs and farmers with their machinery, along with professionals, entrepreneurs and retirees.

After a quarter century at the site, it is the meeting place out Glendon Drive at the lights in Komoka.

Some entrepreneurs meet so often to talk business, they refer to the restaurant as their boardroom.

"For the locals it's a gathering place," says Welch.

"Big deals and gossip gets chewed over every day."

For Welch, the Komoka restaurant he owns with wife Lynn, who does the books and payroll, is the third Little Beaver restaurant he has had.

He bought a hamburger stand in Grand Bend when he was 21 after tiring of an initial career in drafting.

It was called the Little Beaver -- named, he believes, after the man he bought it from who was small and worked hard and had the nickname Little Beaver.

After selling, he, his father and brother-in-law had two restaurants going.

A Little Beaver at Hyde Park Road and Highway 22 and another in Byron across from Springbank Park.

In 1972 they bought a two-bay garage, two-bay car wash, gas pumps and store at the Komoka corner. In 1978, after renovations and the addition of a kitchen, they opened as the Komoka Little Beaver. Business grew as Welch applied his philosophy of "back to the basics" with food -- a tasty, plentiful helping of home cooking.

"People say it maybe isn't the fanciest place, but the food is great," says Welch.

"We've got our niche with the everyday people."

There are booths and long tables in the Little Beaver, a combination that says much about the restaurant's social setting.

"You can't get away with long tables in the city," Welch says.

The long tables bring strangers and sometimes soon-to-be friends together, eating elbow-to-elbow.

Welch, 57, and now a "fill-in" cook trying to ease into retirement, had his first taste of cooking when volunteering regularly at the St. Anne's parish food booth at the Western Fair.

But he largely learned on his own.

He recalls when he expanded from burgers, fries and hotdogs, he advertised a roast beef dinner. One of his first customers got up from the meal, proclaimed it "very good" but tipped Welch off that it was pork, not beef.

"That's how much I knew about it."

Now, after 36 years in business, Welch knows which way the ladle is up. One of his long time employees (there are up to 55 full and part time staff) got him interested in horses. He now has "10 or 12" standardbreds and "likes watching them run."

He also likes golf and nearly three years ago "rescued" the Bear Creek Golf Club from financial ruin by taking it over in partnership with club pro Hugh Getliffe.

"I play golf once a week -- maybe twice." But with a cottage and his horses, he'd like to get out of the kitchen more often.

And he has a mainstay at the Little Beaver. Manager Anne Watson has been with him for the Beaver's 25 years in Komoka and several years before that in the Springbank eatery.

"We've kept some good help for a lot of years. They get to know what some customers want even before they come in the door. Getting to know the customers, basic food, a homey atmosphere, home cooking, good portions -- nobody leaves the Beaver hungry," he says.
